Our journey began three years ago with the name "Ayu-mu" (あゆ夢), meaning "walking towards a new beginning." Our vision was rooted in a deep respect for and desire to share the rich heritage of "edomae" sushi. The name signified a fresh start with boundless possibilities and was inspired by our dear friend and acclaimed Chef Masakazu Ishibashi, endearingly known as "Chef Masa" by his followers in Japan and Asia.Today, we're delighted and honoured to announce our evolution with the rebrand to "Sushi Ayumu by Masa Ishibashi." This will be Chef Masa's second venture outside Tokyo, following his successful "Sushi Nanami by Masa Ishibashi" in Taipei.Growing up in a family that ran a sushi restaurant in Tochigi prefecture, Chef Masa spent significant time honing his skills behind the counter. He's renowned as the former Executive Chef for Ginza Sushi Ichi Tokyo, Jakarta, Bangkok, and Singapore, earning the Singapore branch a Michelin 1-star rating. His subsequent venture, Shoukouwa, became the first sushi establishment in Singapore to secure two Michelin stars within its first two years. In November 2017, Chef Masa returned to Tokyo with his wife Tomomi to establish Sushi Masa Ishibashi at Ginza, swiftly becoming a sensation in Tokyo's prestigious dining scene.As we step into this new chapter, Chef Masa's precision, finesse, and dynamic approach will shine through.
